Ingredients

  • 2 cups chicken stock
  • Seasoning cubes, to taste
  • 1 cup rice
  • 3 slices mango, cubed
  • 1 cup chopped mixed vegetables
  • 1 Scotch bonnet pepper

Instructions

  1. Cook rice and let cool.
  2. Heat oil in wok, scramble eggs, remove and set aside.
  3. Saut onion, garlic, and peppers.
  4. Add rice, soy sauce, and diced mango.
  5. Stir in scrambled eggs and garnish with green onions.
